Zucchini bites are a fun finger food that can be eaten for breakfast, lunch, or dinner. The ingredients are simple, and there is no cooking required. This dish is great for making with kids because each bite is so small and not filling, so it is easy for little hands to devour many. It’s also a great way to engage older children in the cooking process because they will be able to help measure the zucchini and mix the flavorings together.
Ingredients:
- 3 zucchini, sliced into rounds
- 3 tablespoons olive oil
- 1 1/2 tablespoons ranch seasoning
- 1/3 cup parmesan cheese, shredded
- 3 strips bacon, cooked and crumbled
Directions:
1. Preheat oven to 350 °F.
2. Slice the zucchini into round, thicker slices. These zucchini pieces will become more tender, while thinner ones will be crispier.
3. Place the slices of zucchini on a prepared baking sheet or two.
4. Bake these zucchini rounds for 5 minutes, until these appear dried.
5. Drizzle olive oil on the dry zucchini, then sprinkle on the ranch seasoning, parmesan cheese and chopped bacon.
6. Bake the zucchini slices for 8-10 minutes again until the cheese is melted.
