Low-Carb Parmesan-Crusted Fish Fillets With Creamy Dijon Sauce
Fish has a reputation for being bland, but this low-carb fried fish recipe is exactly how you fix that. The fillets get coated in a simple Parmesan crust, crisped in the air fryer, and finished with a creamy Dijon mustard sauce that makes the whole dish taste like something you’d order at a restaurant.
Even better, there are no breadcrumbs, no deep frying, and no complicated steps. In about 20 minutes, you get flaky white fish with a golden, savory coating and a tangy sauce that keeps every bite rich, bright, and flavorful.
Table of Contents
This is the kind of easy low-carb dinner that works on a busy weeknight but still feels special enough to serve with your favorite sides.

The neat part is that this recipe is very customizable. I included a creamy Dijon mustard sauce in this recipe, but this fried fish goes well with several different sauces. It can be baked in the oven or fried in a skillet if you prefer. I’ve even played around with the seasonings I add to the flour mix and found a few I like.
Why You’ll Love This Low-Carb Fried Fish
- No bread crumbs needed: coconut flour and parmesan create a low-carb crust.
- Fast cook time: air fryer fish cooks in about 10 minutes.
- Mild but flavorful: Dijon sauce adds tang without overpowering tilapia.
- Flexible: works with tilapia, cod, haddock, pollock, or thin white fish fillets.
What Makes This Recipe Work
Tilapia does have a reputation for being bland. However, that’s actually what makes it perfect for a customizable fried fish recipe. Its mild flavor won’t overwhelm the flavors of the flour coating or sauce.
It’s super easy to make in the air fryer, though you can also bake it in the oven or fry it in the skillet if you want to. The light coating of flour and cheese keeps the carbs in check while still giving it a crispy, “fried” look and taste. The sauce brings it together by combining the hint of spice and tanginess of Dijon mustard with the creaminess of sour cream and whipping cream.
The best part? This fried fish pairs well with your favorite easy-to-make potato, vegetable, and/or rice sides. I like to keep it simple with some roasted potatoes or Instant Pot broccoli risotto. (Yes, I do love my Instant Pot too.)
This makes an easy recipe to make if you’ve been looking for an interesting way to add more fish to your diet without spending hours in your kitchen. It’s also a hit for dinner, even with picky eaters who have gotten tired of the same old fish recipes.
Equipment You’ll Need

Ingredients for Parmesan-Crusted Fish Filets
Before I do anything, I like to make sure I have all the ingredients because I have run out of sour cream before! You probably already have most of them somewhere in your kitchen. If you have to pick up one or two ingredients, feel free to print or save the recipe card below for easy reference.
For Fish Filets:
- Tilapia Filets (Thawed)
- Coconut Flour
- Parmesan Cheese
- Lemon Pepper Seasoning
For Dijon Mustard Sauce:
- Sour Cream
- Heavy Whipping Cream
- Dijon Mustard
- Dried Chives
Key Ingredient Roles
Why these ingredients? Well, each of them brings something unique to the recipe.
Tilapia Filets (Thawed)
1 pound tilapia filets
I typically get four 4-ounce tilapia fillets for this recipe. I like to aim for fillets that are about 1/2 inch thick, which gives me something solid to work with without being too thick. Tilapia is a white fish that is good for frying because it has a firm texture that holds up well in a deep fryer or frying pan.

Tip for thawing: The USDA says frozen meat can be safely thawed in the refrigerator or in cold tap water. Tilapia will take about a day to thaw in the refrigerator. If you need it faster, place it in a leak-proof package or resealable plastic bag, make sure it’s sealed tightly, and place the fish in cold tap water for about an hour.
Personally, I wouldn’t recommend thawing tilapia in the microwave. It may start to cook around the edges before it fully thaws, which can ruin the final result when fried.
Coconut Flour
1/4 cup coconut flour
What I like about coconut flour is that it can look intimidatingly high in carbs at first glance, but most of that is dietary fiber that won’t be digested. Looking it up on USDA FoodData Central revealed that 100 grams of coconut flour contains 58.9 grams of carbohydrates, but 34.2 of those grams are actually dietary fiber. We won’t even be using that much!
Added bonus: Coconut flour is gluten-free, which means it won’t bother people with celiac disease who might have hesitated to eat fried foods because of possible gluten in the breading.
As you might expect, coconut flour has a mildly sweet flavor with a coconut aroma that I think goes well with tilapia. If you find it in the grocery store, it will likely be in the baking aisle. I’ll buy coconut flour online more often because it can be hard to find locally, though.
Parmesan Cheese
1/4 cup grated Parmesan cheese
I like to buy a block of Parmesan cheese and grate my own. As a block or wheel, it’s more likely to be labeled as Parmigiano Reggiano. (Fancy name, right? Parmigiano Reggiano is actually a regional Italian cheese, which explains why it’s so popular in Italian recipes.)
Parmesan brings a nutty, tangy flavor to this recipe. Because it can be rich right off the block, I don’t like to overdo it.
Lemon Pepper Seasoning
1/4 teaspoon lemon pepper seasoning
Lemon pepper seasoning adds a nice lemon flavor that goes well with the fish. It also adds the mild earthy spiciness of pepper.
Sour Cream
1/4 cup sour cream
Sour cream adds most of the creaminess and a slight tang from its lactic acid content. It also cuts the sharp flavor of the Dijon mustard to keep it from becoming overwhelming.
How To Make Sour Cream
Did you know that it’s easy to make your own sour cream? In the video below, Gemma Stafford shows you how!
Heavy Whipping Cream
1 tablespoon heavy whipping cream
The whipping cream makes the sauce more “sauce-like” with a bit of liquid. It also adds a bit more creaminess. Make sure you get unflavored whipping cream to avoid adding any unusual flavors to the Dijon mustard sauce. I like chocolate or fruit-flavored whipped cream on pie, but not on fish!
Dijon Mustard
1 tablespoon Dijon mustard
Dijon mustard adds a slight tang and a hint of spiciness to anything it’s added to. The number one thing to remember is that it tastes stronger than the yellow mustard condiment you might put on hot dogs or hamburgers.
The reason for that? Dijon mustard contains whole brown and black mustard seeds suspended in vinegar or wine, which brings out the seeds’ flavor more. Yellow mustard mostly contains ground-up yellow mustard seeds, which have a milder flavor.
Dried Chives
1/2 tablespoon dried chives
Chives add an attractive green color and a mild onion-like flavor to the sauce. You can use fresh if you want, though I like fresh chives better as a garnish sprinkled on top if I want more chives.
Best Fish to Use
This recipe works best with mild white fish fillets because they cook quickly, stay tender in the air fryer, and pair well with the creamy Dijon mustard sauce. Thin to medium fillets are easiest to coat and crisp without overcooking.
- Tilapia is the easiest choice because it has a mild flavor, cooks fast, and lets the Parmesan coating and Dijon sauce stand out. It is also usually affordable and easy to find frozen or fresh.
- Cod is a great option if you want thicker, flakier pieces of fish. Since cod fillets are often thicker than tilapia, they may need an extra few minutes in the air fryer.
- Haddock has a light, slightly sweet flavor and works especially well with the tangy mustard sauce. It flakes beautifully once cooked.
- Pollock is another budget-friendly white fish that works well in this recipe. It is mild, tender, and a good substitute for tilapia or cod.
- Catfish can also be used if you like a slightly richer flavor. It has a softer texture than cod or haddock, so handle it gently when coating and flipping.
For best results, choose fillets that are similar in thickness so they cook evenly. If using frozen fish, thaw it completely first and pat it very dry with paper towels before adding the coating. Too much moisture can keep the fish from getting crispy in the air fryer.
Avoid very delicate fish like sole or flounder unless you are comfortable handling thin fillets. They can break apart more easily when coated, flipped, or removed from the air fryer basket.

How to Make Fried Fish in the Air Fryer
Get your tilapia thawed out? Great! Let’s jump right into making this.
Step One: Prepare Air Fryer
Turn on the air fryer and set it to 400 degrees Fahrenheit (204 degrees Celsius). Lightly spray the basket with cooking spray.
If cooking the fish in the oven, turn the broiler on and let it get hot.
You know that “drawer” under your oven that you’ve probably used to store your skillet lids? That might be your broiler! Check your oven’s manual to be sure.
Step Two: Make Flour Mix
Add 1/4 cup of coconut flour, 1/4 cup of parmesan cheese, and 1/2 teaspoon of lemon pepper seasoning to your rectangular container. Stir it together until it’s well blended.

Step Three: Bread Tilapia
Lightly spray both sides of your tilapia fillets with cooking spray. Then dip both sides of the tilapia fillets in the coconut flour mixture, turning and pressing the coating on with your fingers until most of the fillets are evenly coated.
Step Four: Cook Tilapia with an Air Fryer
Arrange the tilapia fillets in a single layer in the bottom of the air fryer pan and cook for 10 minutes at 400 degrees.
Flip the fillets with the tongs about halfway through the cooking time. If you like your fish “extra crispy,” you can give it an extra spray of cooking spray about halfway through, as well. You know your fish is done when it flakes easily with a fork.
How to Keep Air Fryer Fish from Sticking
Pat the fish dry, spray both sides, preheat if your air fryer requires it, and avoid moving the fish too early.

If broiling your fish, arrange the fillets in a broiler-safe dish and broil for 4-6 minutes until they flake easily with a fork. Flip them halfway through.
Pan-frying them? Add just enough cooking oil to a frying pan to coat the bottom, then heat it over medium-high heat until the oil is hot. Add the fillets. Cook them for 2-3 minutes per side until each side is golden brown, and the fillets flake easily with a fork.
Alternate (and USDA-recommended) way to tell if fillets are done: Insert a meat thermometer into the center of the fillets. If the thermometer reads 145 degrees Fahrenheit (62.8 degrees Celsius), the fish is done.
Step Five: Make Dijon Mustard Sauce
While your fish is in the air fryer, whisk together the sour cream, whipping cream, Dijon mustard, and chives in a small saucepan. Heat through on low heat. Do not boil.
Step Six: Serve Fish
When the fish is done, arrange it on plates with your favorite sides. Spoon the sauce evenly over the fish filets. Sprinkle chopped fresh chives on top, if desired. Serve hot.

Tips for Crispy Air Fryer Fish
A few simple steps will help your fish cook up golden on the outside and flaky in the middle:
- Pat the fish dry first: Extra moisture can keep the coating from sticking and crisping.
- Spray the basket and the fish: A light coating of cooking spray helps prevent sticking and encourages browning.
- Do not overcrowd the basket: Leave space between fillets so the hot air can circulate.
- Flip gently: Use a thin spatula and turn the fish carefully so the coating stays in place.
- Check for doneness early: Thin fish fillets cook quickly, so check near the end of the cook time to avoid drying them out.
Once you have the basics down, most air fryer fish issues are easy to fix.
Troubleshooting Fried Fish
If your fish did not turn out quite the way you wanted, here are the most common problems and how to fix them:
- Fish is sticking: The basket may need more cooking spray, or the fish may have been moved too soon. Let it firm up before flipping.
- Fish is not crispy: The fillets may have been too wet, too crowded, or not sprayed with enough oil.
- Coating fell off: Pat the fish dry, press the coating on gently, and avoid handling the fillets too much.
- The fish is overcooked: Start checking it earlier next time. Fish should be opaque, flake easily, and reach 145°F.
- Sauce is too thin: Let it simmer a little longer or stir in a bit more sour cream.
- Sauce is too thick: Whisk in a small splash of heavy cream until it loosens up.
With these small fixes, your next batch should come out crispier, cleaner, and even easier to serve.
Substitutes and Variations for Fried Fish with Dijon Mustard
Going dairy-free? Replace the sour cream with dairy-free sour cream. If you want more coconut flavor, unsweetened coconut cream can replace the whipping cream.
All-purpose flour can replace the coconut flour if you don’t mind that it’s not low-carb. You could also throw some saltine crackers into a food processor and grind them into a fine powder for the coating if you want.
You can mix and match the seasonings in the coating if you want. The important thing is just not to get too heavy-handed with them. I’ll sometimes use garlic powder and black pepper in the coating instead of lemon-pepper seasoning.
Want to try different fish? Cod, haddock, and catfish are also good for frying.
Sauce Variations
Not a fan of Dijon mustard? I have played around with different sauces.
- For a simple way to adjust the Dijon mustard sauce, try adding a squeeze of fresh lemon juice for brightness, a pinch of garlic powder for extra savory flavor, or a spoonful of capers for a salty, briny bite.
- Fresh herbs like dill or parsley also pair really well with fish, especially if you want the sauce to taste a little fresher. If you like a little heat, add a small pinch of cayenne pepper or stir in a little horseradish for a sharper kick.
- A lemon-butter sauce is equally good. What I’ll do is add 4 tablespoons of unsalted butter, 2 tablespoons of lemon juice, and 1 tablespoon of lemon zest to the saucepan and heat it until the butter is melted. (You can also optionally add 1-2 minced cloves of garlic and 2 tablespoons of chopped fresh parsley.) Then I mix it together in the saucepan and spoon it over the fish when it’s done frying.
- You can also add 1 to 2 minced garlic cloves and 2 tablespoons of chopped fresh parsley to the lemon-butter sauce if you want more flavor. The garlic makes it more savory, while the parsley keeps it fresh and light. This version is especially good if you want a sauce that tastes rich without using mustard or cream.

Keto Notes
This low-carb fried fish can fit well into a keto-style meal, especially because it skips traditional bread crumbs and uses a Parmesan and coconut flour coating instead.
According to the recipe card, each serving has 5 grams of carbohydrates and 2 grams of fiber, which comes out to about 3 grams of net carbs per serving. To calculate net carbs, subtract the fiber from the total carbohydrates:
5g total carbs – 2g fiber = 3g net carbs
The Dijon mustard sauce is also low in carbs since it is made with ingredients like sour cream, heavy cream, Dijon mustard, and chives. Just make sure to check the label on your Dijon mustard, since some brands may include added sugar or slightly more carbs than others.
To keep the full meal keto-friendly, serve the fish with low-carb sides like cauliflower mash, roasted broccoli, green beans, zucchini or eggplant fries, sautéed spinach, Brussels sprouts, a salad, or cauliflower rice. I would avoid pairing it with higher-carb sides like regular fries, rice, pasta, or bread if you are trying to keep the meal very low-carb.
FAQ About Fried Fish with Dijon Mustard Sauce
Making this fried fish should be somewhat straightforward, but we do sometimes get questions! I tried to answer some of the most commonly asked questions here. If you think of one I haven’t answered yet, feel free to ask in the comments section.
Why is my coating falling off?
The fish may be too wet; pat it dry before spraying and coating.
Why is my fish sticking to the air fryer basket?
It’s possible that the basket wasn’t well-coated with cooking spray. It may also help to let the fish firm up before flipping it. I like to wait until the fish is halfway through the cooking time before flipping and adding more cooking spray as necessary.
Why didn’t my fish get crispy?
The fish might have been damp right after being thawed. It may help to pat it dry with some paper towels before coating it with the flour mixture.
It may also help to avoid overcrowding the air fryer basket and to make sure the fish is arranged in a single layer on the bottom when air frying.
How do I know if I overcooked my fish?
Overcooked fish can turn mushy or too dry because it releases excessive moisture. The coating may have also burned. It may help to make sure your air fryer isn’t running hot and making sure you don’t leave the fish in for too long. Thinner tilapia fillets also get done faster, so it can help to check them early if they’re much thinner than half an inch.
Why is it important to thaw frozen tilapia first?
Frozen fish can hold more frozen water than you’d think. This can cause the coating to get mushy as it cooks. If the tilapia is still frozen when you put it in the air fryer, it will also take longer to cook, and the coating might burn on the bottom before the fish reaches an internal temperature of 165 degrees Fahrenheit.
Can I thicken my Dijon mustard sauce if it seems a bit thin?
If it needs thickening, I might let it simmer for an extra minute or two to reduce excess moisture.
Can I fix the Dijon mustard sauce if it’s too thick?
It’s easy to thin out Dijon mustard sauce by adding a little extra milk or whipping cream.
How do I store and reheat leftovers?
Store leftover fried fish in an airtight container in the refrigerator for up to 3 days. To reheat, place it back in the air fryer at 350°F until warmed through. This helps the coating crisp back up better than the microwave, which can make the fish softer.
Can I make the Dijon mustard sauce ahead of time?
Yes, you can make the Dijon mustard sauce ahead of time and store it in the refrigerator until you are ready to serve. Warm it gently in a saucepan over low heat, stirring often. If it gets too thick, add a small splash of heavy cream to loosen it back up.
