These smoked salmon cucumber rolls are absolutely beautiful! They look like art on a plate. If you want to make an impressive appetizer that tastes good, this is your winner. These refreshing little bites will not disappoint.

Smoked Salmon Cucumber Rolls:

  • 2 cucumbers, sliced thinly lengthwise into 12 strips
  • 4 oz. cream cheese softened 
  • fresh dill, chopped
  • pepper
  • 12 pieces smoked salmon

For garnish:

  • fresh dill
  • purple onion, sliced very thinly

Wash and dry the outside of the cucumbers. Slice them each into 6 thin strips lengthwise. Lay them flat.

Mix the cream cheese, a pinch of pepper, and some fresh dill in a medium-sized bowl.

Spread the cream cheese mixture onto each cucumber slice.

Place one piece of smoked salmon on each cucumber slice near one end. Roll the cucumber slice up starting on that side.

Stand the cucumber rolls up and garnish each with a sprig of fresh dill and a thin slice of purple onion. Serve immediately.
