This cheerful-looking dip recipe is as tasty as it is colorful. It goes over really well at gatherings and looks particularly lovely at Baby or Bridal Showers. This Tri Colour Spread is my switched-up version of Surprise Spread, a childhood favorite that was served every Christmas Eve in my house. I love the flavors of Surprise Spread, but I don’t love the calories and richness, so I changed the recipe and took away almost half the original calories. It’s not like it’s now a diet recipe! But it is much healthier than the classic version and hasn’t lost any of the fantastic flavors.

Tri Colour Spread

How to Make the Tri Colour Surprise Spread

Mix a block of softened cream cheese, 1/2 cup of sour cream, and 1 heaping Tablespoon of mayonnaise and spread it over one or two plates. I always choose to spread it over two plates. I like a thinner base, and this is one of those situations where more is more! By making two of these appetizers, I can serve my guests and one for our family to eat the next day. You can certainly make just one on a large plate or platter if you prefer a thicker base.

Over the cream cheese base, spread a layer of seafood cocktail sauce. I prefer to use the spicy variety. The amount you use is a matter of personal preference. Some like this to be a very thin layer, while others prefer a more substantial taste of the cocktail sauce. Play around a bit to find your happy medium.

Chop green onions, yellow peppers, and tomatoes. Be sure to remove the seeds from the tomatoes as you don’t want to cause the dip to be runny. Sprinkle the vegetables over the top of the dip.

If you make the spread ahead of time, cover it with plastic wrap and keep it in the fridge until ready to serve. It does keep for a few days so it can be made ahead. Serve with tortilla chips for dipping.
This dip is completely gluten-free, and most tortilla chips are as well, so it is a great gluten-free appetizer option.
This dip is ridiculously addictive! Do you know how early I said I make the second one for our family to enjoy? My family, I may have mainly meant me! This appetizer is my go-to on a really bad day. In fact, the last time I made it, one of my sons asked me what was wrong and said he noticed that I make this on my worst days. He’s right. Some people eat a tub of ice cream to drown their sorrows…I put my feet up after the kids are in bed and eat some tricolor spread!
