It is very little in this world that tastes fresher than this Tzatziki appetizer! It is so good on sandwiches (it makes a giant mess as it drips everywhere, but it is so worth it!) and it works really well as a dip. This is so simple to whip up that you will never be tempted to buy the store-bought version again. It also tastes better than any store-bought tzatziki I’ve ever tried! I use this for souvlaki, sandwiches, as a veggie dip, and served with pita wedges.

I’ve put this recipe into the 5 ingredient appetizers category, but I’m going to give the full disclaimer here and say that if you count salt and pepper as ingredients, this actually has 7 but since I consider salt and pepper as just givens for almost every recipe, I’m going to go with this being 5 real ingredients! You can make this with cucumbers that are peeled or leave the skin on but I recommend leaving the skin on. It gives it just the tiniest hint of a crunch.

Grate 1 cup of an English cucumber. Add 1 1/2 cups of sour cream, 3 cloves of garlic, pressed, 3/4 tsp. dill, lemon zest, and salt and pepper to taste. Mix. That’s it!

This recipe is so forgiving and you can tweak it to your tastes. Add a little more dill or more lemon zest. Add a little less sour cream or more. Whatever. This is one of those no-fail recipes. Try it!
