Are you in the mood for something tasty and a little naughty? If so, then you need to try out these Bacon-Wrapped Buffalo Chicken Bites! They are sure to please any palate and they are a great way to show your friends and family that you can be a little bit wild when it comes to enjoying food!

My quest to wrap the world in bacon continues! These bacon-wrapped buffalo chicken bites are the perfect game day snack.

Bacon-Wrapped Buffalo Chicken Bites

These little appetizers are a great combination of the currently popular taste of buffalo chicken with the classically popular taste of bacon.

First, you will want to cut the chicken into cubes. Season the chicken cubes with parsley, salt, and pepper. Put them in a bowl and pour Frank’s Red Hot Sauce over them. I prefer the extra hot, but go with whichever is your favorite. If you want to infuse more flavor into the bites, you can pierce them with a fork a few times. Leave this to marinate for at least 20 minutes.

Cut your bacon slices in half and roll each chicken cube in bacon. If you want, you can secure them with a toothpick, but they will stay rolled on their own.

Place them on a metal cookie sheet. I know I say this every time that I cook anything with bacon, but metal really does the best job of making the bacon crispy. I use stoneware for everything else that I cook, but with bacon, metal is the way to go.

Serve these when still warm. They will be eaten quickly, but if you do have some leftover because you accidentally served them to all your vegan friends or because there was a snowstorm and none of your guests showed up, know that they do not taste good when reheated. The chicken takes on an unpleasant texture after being reheated so don’t attempt to make these ahead and reheat before serving.

As long as you use gluten-free bacon, these are completely gluten-free appetizers.

Bacon-Wrapped Buffalo Chicken Bites

These are the perfect game day snack!

Ingredients

  • 2 or 3 boneless  skinless chicken breasts, cut into 24 cubes
  • Frank's Red Hot Sauce
  • parsley
  • salt and pepper
  • 12  slices  of bacon sliced in half

Instructions

  • Preheat oven to 375°.
  • Cube chicken.
  • Season with salt, pepper and parsley.
  • Cover with Frank's Red Hot Sauce.
  • Marinate for at least 20 minutes.
  • Roll in bacon slices.
  • Place on metal baking sheet and cook until bacon is crispy.
  • Serve immediately.
