Asparagus Prosciutto Spears

These are my secret weapon to have my kids begging for more asparagus appetizers! These are so good with the basic ingredient. It is impossible to eat just one!

Whenever I make these, I “catch” the kids passing by the tray in the kitchen and popping them in their mouths. Seeing them eat their greens is always a good thing! Sometimes, there are hardly any left to officially serve!

Asparagus Prosciutto Spears

My husband and I were at a restaurant and when I saw these go by, I was regretting not ordering them myself. I decided that they couldn’t be too hard to make myself and with the help of my friend Holly, gave it a try. It was even easier than I thought it would be.

Wash fresh asparagus spears with cold water and snap off the bottom. Slice spear of asparagus strips of prosciutto in half. Wrap the tops of the vegetables in prosciutto and set them down on a metal baking sheet. Season the asparagus with cracked black pepper and drizzle with olive oil.

Bake  for about 20 minutes. The baking time will vary depending on the thickness of the asparagus. You want them to still have a bit of crunch to them so that they aren’t too floppy. Once cooled, place the item on paper towels to remove any additional moisture.

You can serve these prosciutto-wrapped asparagus spears as a side dish or as an appetizer. Either way, they are delicious appetizer!

Ingredients

  • 24  asparagus spears
  • 12  slices  prosciutto sliced in half
  • olive oil
  • black pepper

Instructions

  • Preheat oven to 375°.
  • Wash asparagus and snap off the ends.
  • Wrap the tips of the asparagus in prosciutto and place on metal baking sheet.
  • Sprinkle with cracked black pepper and drizzle with olive oil.
  • Bake for 20 minutes (more for thicker asparagus spears).
