Vegan Sugar Cookie Protein Bites

These turned out so good!

I say that with a note of pride. So please. Note that.

Okay, really folks. Here is what happened. I had planned out a recipe. Naturally colored candied popcorn! And you know how I love popcorn.

Oh it was going to be epic. Except. IT WASN’T.

It was a fail. Sigh. Sigh. Sigh.

Not even my kids would try the popcorn, it was a soggy mess.

But don’t cry over spilled milk…or failed popcorn. Or whatever saying you want to inject there.

Back to the drawing board.

So I noticed the next day when I was randomly looking at odd food holidays (I know, I know I am kind of a nerd – who just randomly looks up food holidays? LOL) that National Sugar Cookie Day was that day!

I knew immediately I wanted to make something. Maybe not even a recipe to post here. Just because it would fun and it would make a fun post for the Instagram. After browsing through many vegan sugar cookie recipes, I didn’t really a) have the time to make them b) wasn’t really feeling I wanted to make a traditional cookie. 

So as I was making my morning smoothie, I had inspiration – Vanilla Protein Powder would make a great ‘sugar cookie’ base for cookie protein bite.

Oh, except for the part, where I thought to myself – I have all these freeze tried strawberries from my popcorn fail, why not crush those and make that the ‘icing’. Strawberry pink ‘icing’.

(okay some of them have actual sprinkles too – a gal’s got to live a little, right?) So top these Sugar Cookie Protein Bites with crushed freeze dried strawberries or sprinkles – your choice! They should be stored in the refrigerator OR freezer.

Vegan Sugar Cookie Protein Bites

Made with your favorite vanilla vegan protein powder these pack a protein punch with a cute presentation.

Ingredients

  • 1 cup old fashioned oats (I used gluten free)
  • 1/4 cup *
  • 2 Tblsp Cashew Butter**
  • 1 Tblsp baking dates
  • 3 Tblsp unsweetened applesauce
  • pinch of salt
  • freeze dried strawberries, crushed cashews, pink sprinkles

Instructions

  • Put everything in a small food processor and pulse until combined (only until combined you don't want to turn the oats into flour!).
  • Roll into small balls.
  • Crush your freeze dried strawberries and put into a small pan with crushed cashews. (or put sprinkles in a small pan for a treat!). Roll each ball into your crushed mixture and then place on a parchment lined baking sheet. Put your balls into the fridge for at least 30 minutes (you could also freeze them for a frozen treat!)
  • Store in the refrigerator or freezer.
