Vegan Sugar Cookie Protein Bites

Made with your favorite vanilla vegan protein powder these pack a protein punch with a cute presentation.

Ingredients

  • 1 cup old fashioned oats (I used gluten free)
  • 1/4 cup *
  • 2 Tblsp Cashew Butter**
  • 1 Tblsp baking dates
  • 3 Tblsp unsweetened applesauce
  • pinch of salt
  • freeze dried strawberries, crushed cashews, pink sprinkles

Instructions

  • Put everything in a small food processor and pulse until combined (only until combined you don't want to turn the oats into flour!).
  • Roll into small balls.
  • Crush your freeze dried strawberries and put into a small pan with crushed cashews. (or put sprinkles in a small pan for a treat!). Roll each ball into your crushed mixture and then place on a parchment lined baking sheet. Put your balls into the fridge for at least 30 minutes (you could also freeze them for a frozen treat!)
  • Store in the refrigerator or freezer.
