Vegan Sugar Cookie Protein Bites
Made with your favorite vanilla vegan protein powder these pack a protein punch with a cute presentation.

- 1 cup old fashioned oats (I used gluten free)
- 1/4 cup *
- 2 Tblsp Cashew Butter**
- 1 Tblsp baking dates
- 3 Tblsp unsweetened applesauce
- pinch of salt
- freeze dried strawberries, crushed cashews, pink sprinkles
Put everything in a small food processor and pulse until combined (only until combined you don't want to turn the oats into flour!).
Roll into small balls.
Crush your freeze dried strawberries and put into a small pan with crushed cashews. (or put sprinkles in a small pan for a treat!). Roll each ball into your crushed mixture and then place on a parchment lined baking sheet. Put your balls into the fridge for at least 30 minutes (you could also freeze them for a frozen treat!)
Store in the refrigerator or freezer.
