These Miso-Glazed Sweet Potato fries are a yummy addition to any dinner or even to make as a simple snack solution. They are gluten free, nut free and come together quickly. Everyone will love these bright orange healthy fries from the new Eating Vegan cookbook with a sweet and savory glaze.

A Plant-Based Cookbook for Beginners

Eating Vegan, the new cookbook from Dianne Wenz, contains a wealth of information for people that want to go vegan. This new vegan cookbook contains not only just ‘what to eat’ but is a wealth of information about ingredients used in vegan cooking and new cooking techniques.

I love the first part of the book and how it explains what it means to be vegan today! It also explains what a plant based is vs. a vegan diet! That in itself is a top question that most people have when exploring if a plant based vegan diet is for them.

Check out the title of these other recipes in this new plant based book:

  • Spinach Quiche
  • Chipotle Seitan Taquitos
  • Spinach Mushroom Calzones
  • Snickerdoodle Cookie Dough Dip

I don’t know about you, but I am drooling over that list of vegan food!

The Ingredients Used in Miso-Glazed Sweet Potato Fries

I love that this recipe teaches you how to make crispy baked sweet potato fries! Chances are you have tried to make sweet potato fries at home before and they were limp and not worthy to be called a french fry.

The secret to these fries is cornstarch! Cornstarch helps soak up the moisture, thus producing a better baked fry – that is crispy!

Other main ingredients include:

  • Maple Syrup
  • White Miso
  • Apple Cider Vinegar

That’s it! These fries are simple, taste great and are easy to make.

But wait! I know you are wondering what the heck is white miso. I wondered that at one time too! White miso is made from soybeans that have been fermented with a large percentage of rice. It has a sweet yet savory taste. It’s perfect to dress up these spuds and adds some real flavor depth. Miso may seem like an investment up front, but because it is fermented and considered a preservative food, it can last up to one year in your refrigerator!

We have used miso in these recipes on our blog:
