Bacon Corn Dip with Cream Cheese

This Bacon Corn Dip with cream cheese was taken to 2 parties in one day and devoured at both places! A ranch dip that’s loaded with crispy bacon, roasted corn, blue cheese, tomatoes and cheddar cheese, it’s basically all of your favorite Cobb Salad ingredients in a delicious dip recipe!

I love this dip! This corn dip with cream cheese and ranch packet makes it so flavorful. It’s perfect for parties or a quick snack.

If you’re looking for an easy tailgating dip recipe, a side dish to take to a BBQ or just something to sit lay in your bed by yourself and devour in the dark… this bacon corn dip is the answer.

I’m usually a fan of hot dip over cold dip. That warm, gooey melted cheese in Bacon Shrimp Dip or Hot Pizza Dip is pretty much one of my favorite things.

Until I saw this Cobb Dip from Lemon Tree Dwelling. It had all of my favorite ingredients and since they’re my favorite ingredients, that meant I had them all on-hand the morning I had to make a side for a family picnic.

I tweaked most of her measurements for the toppings, and it ended up absolutely perfect! I actually made a double batch so I could take some to a friend’s picnic later that same day. Both parties devoured it and one friend even put a big spoonful on top of his burger! I’m all for unique hamburger toppings and this was certainly one!

How to Make Bacon Corn Dip with Cream Cheese

Start by softening your cream cheese. You want an 8 ounce block of cream cheese pretty soft so that you don’t have any clumps in it.

How to Soften Cream Cheese Quickly

If you didn’t think to take you cream cheese out of the fridge ahead of time (or if you’re just always making recipes last minute), here’s how to soften cream cheese quickly!

Just remove the block of cream cheese from the foil wrapper and place in a microwaveable-safe bowl. I hate doing dishes, so I just use the same large bowl that I’m going to end up making my whole recipe in. Place the bowl in the  microwave and microwave for 15 seconds. Remove and stir making sure that it’s smooth the whole way through. If there are still little lumps, you can microwave for an additional 5 seconds.

You don’t want to microwave too long, though, because you don’t want it to melt.

How to Make Ranch Dip Base

The base for this dip is your softened cream cheese, 1 cup of sour cream and 1 packet of Hidden Valley Ranch Dip Mix.

BUT… I pretty much NEVER buy packets of Hidden Valley Ranch Dressing Mix. It is so much cheaper if you buy a canister of it! I literally pay half as much for this canister as I would if I bought 8 ounces of the packets.

And you can use it for SO many recipes! Sprinkle it over chicken, make Ranch Pretzels (a family addiction over here), sprinkle over popcorn, add to mashed potatoes. Seriously, trust me that you should just go for the canister and save yourself tons of money!

Aaanyways, for the dip base, mix up your cream cheese, sour cream and 2 tablespoons of the dip mix. Once it’s all smooth, spread it into the base of a pie or 1 quart casserole dish.

How to Make Loaded Ranch Dip

Now for the toppings! I started by frying up 6 slices of bacon, you can add more if you want extra bacon. Once they’re done, remove them from a paper towel to cool. Do NOT throw away that bacon grease, though!

I add about 1 cup of sweet corn straight to the hot griddle with the bacon grease still on it. Let it fry up and get nice and roasted, stirring occasionally.

And then it’s pretty much time to assemble your dip. This freakishly good dip looks like it’s got lots of ingredients and might be complicated.

I promise, it’s not. It’s a loaded bacon and corn dip. Loaded kind of implies that there are lots of ingredients. But aside from mixing up the cream cheese base, all you’re doing is layering the other ingredients on top of each other.

So sprinkle about 3/4 cup shredded cheddar cheese over that cream cheese base. Then chop up one large tomato and spread that out. Add about 1/4 cup chopped lettuce, your roasted corn, crumbled bacon, and 1/2 cup blue cheese crumbles.

Then take a giant tortilla chip and get a big scoop of it. Shove it in your mouth and try not to groan. It’s really bizarrely good. I’m typing this up at midnight on a Wednesday and I really, really want to go make a batch of this now!

Ingredients

  • 8 oz Cream Cheese softened
  • 1 cup Sour Cream
  • 2 Tbsp. Hidden Valley Ranch Dressing Mix
  • 6 slices Bacon
  • 1 cup Corn
  • 3/4 cup Cheddar Cheese shredded
  • 1/4 cup Lettuce chopped
  • 1 large Tomato Chopped
  • 1/2 cup Blue Cheese Crumbles

Instructions

  • In a medium bowl, mix cream cheese, sour cream and dressing mix until smooth and no lumps remain. Spread into bottom of pie dish or 1-quart casserole dish.
  • Fry bacon until done and then remove to paper towel to cool. Once cool, crumble into smaller pieces. 
  • Using the same griddle with the bacon grease, fry your corn until roasted and just starting to char.
  • Sprinkle the cheddar cheese over the cream cheese base. Then add chopped lettuce, chopped tomatoes, corn, bacon crumbles and blue cheese. 
  • Refrigerate until ready to serve. Serve with tortilla chips or crackers!

Notes

The 2 tablespoons of Hidden Valley Ranch Dressing Mix is equal to one packet. I just prefer to save money and always have a large canister on-hand! 
You can really mix and match whatever toppings you like for this dip! But try this version first just because it really is the best!
