In a medium bowl, mix cream cheese, sour cream and dressing mix until smooth and no lumps remain. Spread into bottom of pie dish or 1-quart casserole dish.
Fry bacon until done and then remove to paper towel to cool. Once cool, crumble into smaller pieces.
Using the same griddle with the bacon grease, fry your corn until roasted and just starting to char.
Sprinkle the cheddar cheese over the cream cheese base. Then add chopped lettuce, chopped tomatoes, corn, bacon crumbles and blue cheese.
Refrigerate until ready to serve. Serve with tortilla chips or crackers!
The 2 tablespoons of Hidden Valley Ranch Dressing Mix is equal to one packet. I just prefer to save money and always have a large canister on-hand!
You can really mix and match whatever toppings you like for this dip! But try this version first just because it really is the best!
