Ahh the season of baking Christmas goodies is upon us! I have been busy in the kitchen all weekend with all sorts of vegan baking projects, how about you?

One of the outcomes of this baking marathon are these super easy Vegan + Gluten Free Chocolate Dipped Snickerdoodle Cookie Truffles!

Easy Vegan Truffles

So I took a few shortcuts to make these easy peasy to put together. This makes them super easy to throw together when at the last minute you are asked to bring a dessert to a holiday party!

I used Enjoy Life Snickerdoodle Cookies. Starting with pre-made cookies make these truffles super simple. Plus saves your wallet the grief of picking up a bunch of additional ingredients that could cost you a few extra dollars. I am all about simple and money saving this time of year!

Plus using the Enjoy Life food brand means that this recipe is top allergen free! Perfect for any party guests that may be allergic to certain ingredients.

Of course you could use any cookie flavor you like, but I really love the warm smell of these snickerdoodle cookies from the cinnamon.

Another ingredient that makes these super simple – using store bought vegan cream cheese! You should be able to find this in the refrigerated cheese section at your grocery store.

Who else loves that vegan ingredients are so much easier to find these days?

After crumbling the cookies in your food processor you combine them with softened vegan cream cheese and form into small cookie dough balls.


Chocolate Dipped

Of course the moment when truffles shine are when they are dipped in chocolate! I used The Good Life allergy free semi-sweet chocolate chips to cover these snickerdoodle cookie balls. (I am not sponsored by The Good Life, they just happen to be readily available in my local grocer).

Chocolate Dipped Snickerdoodle Cookie Truffles (V + GF)

3 ingredient recipe makes these easy yet impressive enough for gift giving!

Ingredients

  • 1 – 6 oz package pre-made snickerdoodle cookies (vegan + gluten free*)
  • 2 Tblsp. vegan cream cheese**
  • 1/2 – 3/4 semi-sweet chocolate chips***

Instructions

  • Line a 13 x9 rimmed baking sheet with parchment paper.
  • In food processor, process cookies until they are fine crumbs.
  • Pour into medium sized bowl and mix well with vegan cream cheese, roll into small sized cookie balls and place on parchment lined pan.
  • Freeze until firm, about 1 hour.
  • In microwave safe bowl, melt chocolate chips. Set timer for 1 minute and stir after 30 seconds. Continue to melt chips, until melted all the way through.
  • Dip each cookie ball into melted chocolate and place back on cookie sheet.
  • Freeze again until firm.
  • Store in refrigerator or freezer.
