Anyways – why did I just utter that?

Because literally every time I make this, I take my finger around the edge of the dish and lick it clean.

Sun dried tomatoes take that best part of the tomato – the sweetness – and then it is dried like a raisin. It produces this chewy bit of savory goodness that can’t be beat!

This hummus is so easy to make which makes it another reason to love. A few ingredients, a food processor and bam you have a delicious dip! Ready for lunches, parties, wraps, sandwiches and more.

Could adding vegan, plant based flavor get any easier? I think not!   Except if you were to make our original oil-free hummus recipe. Cause’ that is super easy too.   And finger lickin’ good.

[Oil Free] Sun Dried Tomato Basil Hummus

Ingredients

  •   1 – 15 oz can garbanzo beans (chickpeas), drained and rinsed well, reserve liquid
  • 1/4 cup sun-dried tomatoes, chopped or julienned
  • 1/3 cup aquafaba (chickpea liquid) OR olive oil
  • 3 Tblsp lemon juice
  • 2 Tblsp Tahini
  • 2 garlic clove, minced
  • 2 tsp dried basil
  • 1/2 – 1 tsp salt

Instructions

  • All all ingredients to small food processor* and process until smooth.
  • Serve with fresh veggies or crackers.
  • Store in refrigerator.

Notes

  • *You could use a blender but will need to scrape down sides with spatula frequently
