I’ll be honest, I love making popcorn in my air popper. Naturally, popcorn is the base of this entire recipe.

Granulated Sugar

3/4 cup granulated sugar

Coconut Oil

3 tablespoons coconut oil

I like coconut oil as an alternative to melted butter. This adds a slight coconut flavor to the popcorn.

Light Agave Nectar

1/4 cup light agave nectar

2 teaspoons maca powder

This adds a unique malty or caramel-like flavor to the popcorn.

When shopping for maca, you may notice that it comes in three different colors! Most of the differences involve the flavor and how common it is.

  • Yellow maca is the most common and often the cheapest, typically making up 60-70% of the harvest. It has a mild, earthy, slightly malty flavor.
  • Red maca makes up 20-25% of the harvest and has the sweetest flavor that is slightly milder than black maca.
  • Black maca is the rarest maca at 10-15% of the harvest. It has the most intense earthy and pungent flavor, so you’ll want to use less of it if you use this version.

Ingredients

  • 10 cups air popped popcorn
  • 3/4 cup granulated sugar*
  • 1/4 cup light agave
  • 3 Tblsp coconut oil
  • 2 tsp maca powder
  • 1 tsp cinnamon powder
  • salt to taste
  • 1 tsp almond extract
  • 1/2 tsp baking soda

Instructions

  • Line a large rimmed baking sheet with parchment paper and pre-heat oven to 250 degrees.
  • Make your popcorn and set aside in a large bowl.
  • Combine granulated sugar, agave syrup, coconut oil, maca powder, cinnamon and salt. Bring to a boil and stir mixture constantly for 3 – 5 minutes. Your candy thermometer must reach 150 degrees!
  • Remove from stove and quickly stir in almond extract and baking soda. Pour mixture over reserved popcorn.
  • Place on prepared baking sheet and bake in oven for 45 minutes, stirring every 15 minutes.
  • Cool on wire racks.
  • Store in air tight container.

How to Make Cinnamon Maca Almond Popcorn (Step-by-Step)

I know you’re going to want this ready for movie night. So let’s jump right into making our popcorn!

Step 1: Air Pop the Popcorn

First things first, you need to air pop your popcorn! You can do this on the stovetop by following the instructions on the popcorn container. Just watch it carefully to make sure it doesn’t overflow the pot too badly. I think it’s more fun to use my air popper, though.

Step 2: Make the Cinnamon Maca Almond Candy Mixture

Next, you will want to make the cinnamon maca almond candied mixture. On the stovetop, combine your coconut oil, cinnamon, maca, agave, sugar, and salt. Using a candy thermometer or a handy cooking thermometer, heat the mixture to 150 degrees. This ensures your popcorn will turn out candied.

Remove your pan from the stove and quickly add the extract and baking soda. This will cause the mixture to foam; that is okay!

Step 3: Coat the Popcorn

Working quickly, pour it over your popcorn. Stir to coat all the pieces.

Step 4: Bake Until Crisp

Then spread the coated popcorn on a baking sheet covered with parchment paper and bake at 250 degrees Fahrenheit for about 45 minutes to harden the candy mix. Stir the popcorn every 15 minutes.

Step 5: Cool & Serve

Allow popcorn to cool enough that you won’t burn your fingers while “taste-testing” it. Transfer popcorn to a large bowl or your favorite souvenir popcorn bucket to serve for movie or game night.

How to Store Cinnamon Maca Almond Popcorn

Store this popcorn in an airtight container. This popcorn will last a few weeks if the container is unopened! But since it is so delicious, that lasting weeks probably won’t happen.

You can also store it in a few smaller containers to ensure additional freshness. The exposure to air when opening the container is what will cause it to go softer more quickly.

Substitutions and Flavor Variations

First off, I sometimes like to tweak the amounts in this recipe to my liking. I’m sometimes in the mood for a little less sugar and a little more cinnamon, for instance.

I’ve used brown sugar instead of white granulated sugar in this recipe with tasty results before. You could also replace the sugar with 1/2 cup of honey and adjust the other liquids to suit.

If you like a stronger nutty flavor in your popcorn, peanut oil instead of coconut oil might work.

I haven’t really tried a substitution for maca. However, you might get away with playing around with anything caramel-flavored, like Birch & Meadow’s popcorn caramel glaze.

How do I know if the popcorn is done in the oven?

The cinnamon-maca glaze should be hardened on the popcorn with no spots that feel wet to the touch.

Did I make too much glaze or too much popcorn?

There should be enough glaze to cover all the popcorn. If there’s a significant amount of glaze pooled on the bottom of the bowl after you’ve transferred the popcorn to the baking sheet, it’s possible that you made too much glaze or too little popcorn.

If the popcorn does not seem evenly covered with the glaze, it’s possible that you made too much popcorn, which is super easy to do. Luckily, this can be fixed by making a little more of the glaze.

The calories seem high for popcorn. Is there a way to dial it back?

It’s mostly the coconut oil and the sugar that add the calories. It’s possible to either cut back on the sugar or replace it with 1/2 cup of honey and adjust liquids to suit. You could also try coconut sugar or maple syrup.

It’s rare to find a “reduced calorie” oil, but it’s possible to find oils that have less unhealthy fat and more healthy fat. You could also try using a type of oil that has less saturated fat than coconut oil, like sunflower, olive, or avocado oil.

Can I keep the popcorn from getting too soggy?

Sogginess can be prevented by baking it until there are no wet spots on the popcorn, and then cooling it completely and storing it in an airtight container. It sometimes helps to store it in smaller containers to reduce its exposure to air whenever someone opens the container to sneak a handful of popcorn.
