- 10 cups air popped popcorn
- 3/4 cup granulated sugar*
- 1/4 cup light agave
- 3 Tblsp coconut oil
- 2 tsp maca powder
- 1 tsp cinnamon powder
- salt to taste
- 1 tsp almond extract
- 1/2 tsp baking soda
Line a large rimmed baking sheet with parchment paper and pre-heat oven to 250 degrees.
Make your popcorn and set aside in a large bowl.
Combine granulated sugar, agave syrup, coconut oil, maca powder, cinnamon and salt. Bring to a boil and stir mixture constantly for 3 - 5 minutes. Your candy thermometer must reach 150 degrees!
Remove from stove and quickly stir in almond extract and baking soda. Pour mixture over reserved popcorn.
Place on prepared baking sheet and bake in oven for 45 minutes, stirring every 15 minutes.
Cool on wire racks.
Store in air tight container.
