One of my most favorite type of foods is anything that has crunch! That is why I love this Thai mango ‘pork’ slaw and I love the pigless pork rinds that are featured in it.

Hold up! Pigless pork rinds?! Is that such a thing? Regardless if you ate pork rinds before you went plant based (I didn’t!), you will LOVE this meat free crunchy snack. Outstanding Foods describes them as ‘Hella Tasty Protein -Packed Pork Rinds…Without the Pig’. This is one marketing campaign I can get behind! (and also as a digital marketer in my other life, I LOVE their messaging – it’s catchy, bold and SO FUN!)

These pigless pork rinds are called ‘Pig Out’ for a reason, they are tasty and hard to eat just one! While they are still a snack and should be consumed in moderation, these pigless pork rinds have 75% less sodium, 67% less saturated fat and zero cholesterol than their ‘meaty’ counterpart.

This vegan slaw recipe is absolutely delicious and the perfect dish for your next BBQ. It’s sweet, crunchy and has a touch of heat that will make your tastebuds soar! It is also so colorful, your belly will start growling soon after seeing this slaw. Can I admit that my husband I were licking the bowl clean? No shame, it tasted that good!

This slaw is best served fresh right after you make it! If you have leftovers, know that your ‘pork’ rinds will get soft in the fridge, but it is still delicious. Eat within one day though.

How to Serve Thai Mango Slaw

This is the perfect summer coleslaw side dish! It’s light and crunchy and contains no dairy. Vibrant colors and fresh ingredients like cilantro and broccoli slaw make this a healthy dish that is perfect for your next summertime get together.

Vegan Thai Mango ‘Pork’ Slaw

Ingredients

  • 3 Tblsp lime juice
  • ½ Tblsp white miso paste
  • ½ Tblsp amino acids
  • 1 clove minced garlic
  • 1 tsp brown sugar
  • ½ large ripe mango, diced
  • ½ cup fresh cilantro, chopped
  • 1 jalapeño, deseeded and chopped*
  • 1 cup broccoli slaw
  • ¼ cup chopped green onion
  • 2 cups – Original flavor
  • Rep pepper flakes, optional

Instructions

  • In a small bowl, whisk together lime juice, white miso paste, amino acids, garlic and brown sugar.
  • Gently stir in your mango, cilantro, jalapeno, green onion and broccoli slaw.
  • Stir in your pork rinds.
  • Sprinkle with a dash of red pepper flakes (optional).
  • Serve immediately.
  • Best ate the same day, but if you have leftover, store in refrigerator and consume within on day.

Notes

  • *if you love extra heat, leave the jalapeño seeds in!
