Zippy Cilantro Peanut Butter Oil Free Dressing

I love to make sure I use every ingredient in my fridge to the best of its lifespan. Anyone else with me on that?

Sometimes the lifespan is short – buy something and eat it immediately.

Other times, like with a fresh herb, you only need a small bit for a recipe and then have a bunch leftover!

Well, this happened to Rachel and I when I visited her family in North Carolina. We made this wonderful Texas Caviar for Rachel’s graduation party and had added some fresh cilantro to it to give it a little pizazz.

But now what to do with all the leftover cilantro? And random vegetables in fridge?

I could use them in a taco salad– but wasn’t really feeling a southwest type of vibe that day.

I could use it in some type of miso asian style bowl – but didn’t have any miso on hand.

Enter Zippy Cilantro Peanut Butter Marinade and Dressing.

This turned out amazing! Zippy because there is a little spice in it that explodes at the back of your mouth. Oil – free because there is NO added oil.

And this stuff just gets better as it sits in the fridge. I was still eating it a few days later on salad, on grilled veggies, on chickpeas. IT is that good.

So gather some of those veggies lying around your fridge, whip up this dressing and go to town feasting.

When used as a marinade, I recommend pouring it on your veggies at least an hour before grilling and then serving the leftover dressing on the side.

We used corn, broccoli, zucchini, cherry tomatoes, onion and mushrooms in our grilled vegetable mix, but feel free to use whatever sounds good to you!

Zippy Cilantro Peanut Butter Oil Free Dressing

Oil Free, Dairy Free and Flavor Filled for Dressing Up a Salad or Using as a Marinade!

Ingredients

  • 1 cup fresh cilantro
  • 1/2 cup water
  • 2 Tblsp all natural peanut butter
  • 2 Tblsp soy sauce
  • 2 Tblsp lime juice
  • 1 tsp maple syrup
  • 1/4 – 1/2 tsp ground ginger
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • dash of hot sauce

Instructions

  • Put all ingredients in blender and blend until mixed thoroughly.
  • Use right away or chill in fridge until ready to use.

Notes

  • If using to marinate grilled vegetables, I recommend marinating for at least 1 hour.
  • This dressing can last in the fridge 5 – 7 days and gets more flavor intense as it sits.
