Crispy Green Bean Fries with Smokey Tahini

I have to admit something. I don’t really care for french fries. I KNOW. I am weird.

I am not sure I even liked them as a kid. (yep, I was that weird kid who didn’t eat fries, ketchup on her hamburger or drink pop…I am quirky like that!).

But what I do love? These type of fries.

They are healthy. (ahem, green beans).

They are crispy. (Hello, Panko. It is awesome and it is now gluten free!)

So let’s chat about these fries and how to make them. You will love them because of the above mentioned:

Your hands will be a mess while making them. But just remember the end result is crispy goodness!

And that dipping sauce/dressing. It is so good. A little smokey. A little spicy.

Tossed all together in a bowl and the ‘fries’ the limit!

The Essentials Green Bean Fries:

Trimmed Green Beans (about a 1 to 1 1/2 lb.)

1/2 Cup Panko (Gluten Free if Needed)

1/4 Cup Nutritional Yeast

1/2 Cup Flour (I used Gluten Free Chickpea)

1/2 Cup Water 1/2 – 1 tsp Garlic Salt (I used about 3/4 tsp)

How to:

Preheat oven to 425 degrees. Line a large rimmed baking pan with parchment paper. Create an assembly line for green bean fries. Put water in a bowl. Combine flour and salt, put in a shallow pan (I like to use old pie tins). Combine Panko and Nutritional Yeast. Assemble fries in this order. Dip in water, dip in flour mixture, roll in panko mixture. Place in single layer on lined baking sheet. I suggest using one hand for wet and one hand for dry…things are gonna get gooey! 🙂 Bake for about 20-25 minutes, until Panko gets a tiny bit brown and green bean fries are soft. This may require taste testing a few!

The Essentials Smokey Tahini Dressing/Sauce

2 Tblsp Tahini 3 Tblsp Water 1/2 Tblsp Lemon Juice 1/2 Tblsp EVOO

1/4 tsp. salt

1/4 tsp smoked paprika

pinch of cayenne pepper

How to:

As you assemble ingredients in bowl, whisk…and keep whisking until all combined into a nice smooth consistency!

Assemble your green bean fry bowl any way you like! I enjoyed mine as a salad bowl! My husband enjoyed his as a side dish. Either way delicious!
