Ingredients

  • 1¾ cups unsweetened almond milk
  • 1½ cups rolled oats
  • ½ cup unsweetened dairy-free yogurt
  • ½ cup pumpkin puree
  • 3 Tablespoons peanut butter powder
  • 2 Tablespoons chia seeds
  • 2 teaspoons agave nectar
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon maca powder, optional

Instructions

  • In your jar, add all ingredients except milk.
    After adding all ingredients, pour in the milk.
  • Lid the jar and shake until combined. If they aren't combined, remove the lid, stir, then shake again.
    Seal the jar and refrigerate overnight.
  • Enjoy cold straight from the fridge, or warm gently in the microwave for 30 seconds to 1 minute if you prefer warm oats.
  • Before eating, stir in your desired toppings.

Notes

  • Refrigerate overnight so the oats and chia seeds have time to absorb the liquid and thicken.
  • Mix everything well before refrigerating so all the oats are coated in liquid.
  • Add milk later for a creamier consistency.
  • Keep add-ins like banana slices, granola, and crunchy nuts separate until serving so they don’t get soggy.
Doneness Cues
The overnight oats are ready when:
  • A spoonful is smooth and creamy.
  • The oats look plump and swollen. 
  • The texture is thick but spoonable.
  • There’s no pooling liquid.
Storage
  • Refrigerating: Store the prepared oats in a covered container at 40°F (4°C) or below and use within 3–4 days.
  • Freezing: You can freeze overnight oats for 2-3 months, although the texture may become softer after thawing 
  • Thawing: Thaw them overnight, then stir well and loosen with a splash of milk if needed.
