So what did you have for breakfast this morning? A nibble of your kids cereal? Coffee? Nothing? I know we have always been told breakfast is the most important meal of the day. So I bring you a solution – a pumpkin + PB overnight oats solution!
Back to breakfast being the most important part of the day – I agree! Whole – Heartedly. I have always been a breakfast lover.
Okay. Really just a cereal lover. I freakin’ love cereal. I am not sure why.
It can taste like cardboard and I am still thinking, I love this cereal.
I am quirky like that.

But I have to admit growing up…I kinda hated oats.
Give me a granola bar – yes, all for that. Crunchy granola cereal. Well I think you know the answer to that, see above statement regarding cereal if you don’t know.
But warm oats, I was never a huge fan of…until I discovered overnight oats.
Then I was in ❤️.
Overnight Oats Love
Yes, overnight oats are that good. And okay, maybe it was just a natural step from my cereal loving self. But they are that good.
Do You Eat Overnight Oats Cold?
You could. But honestly, I love them warmed up a little. Then topped with toppings.
Pumpkin + PB Overnight Oats – Is that a Weird Combination?
One would think! But not really. Pumpkin puree has no taste – maybe a little sweetness to it but otherwise pretty bland ! So you add taste to these oats in the form of peanut butter powder and dairy free unsweetened vanilla yogurt.
So there you have it: pumpkin + pb overnight oats. Some might say I eat the same things every day. And I point to my oats…and say well the topping ideas are endless, so really, I can mix it up everyday.

You will need a large storage container. I used a quart size mason jar. Add all ingredients to jar except dairy free milk. After all ingredients are added, pour milk over. If you are using a storage container, stir! If you are using a mason jar, lid the jar and shake, shake, shake until all ingredients are combined. If they are not combined you may need to take lid off and stir and then shake it all up again.
Store in fridge overnight.
Eat cold or warm up for 30 sec to 1 minute.
Top with favorite toppings.

Extract: I have used almond extract and that works great as well! Other sweeteners: Molasses or maple syrup will also work.
