Ingredients

Graham Cracker Crust

Strawberry Filling

  • 1 quart Strawberries
  • 1 cup Sugar
  • ¾ cup Cold water
  • 3 Tbsp. Cornstarch
  • 8 oz. Cool Whip

Instructions

Graham Cracker Crust

  • In a medium bowl, melt the butter, then mix it with graham cracker crumbs and sugar.
  • Pour into an 8″ or 9″ pie plate, pressing it up against the sides and bottom. Place in the fridge for about 20-30 minutes while you make the pie filling.

Strawberry Pie Filling

  • Cut the stems off all the strawberries and set aside about half or a little more.
  • Place remaining strawberries in a saucepan with sugar and heat over medium heat until boiling. Stir frequently. Mash the strawberries as you're stirring.

Thicken the Mixture

  • In a small bowl, whisk cornstarch with cold water until smooth. Add it gradually to the strawberry mixture and cook until thickened.
Reduce the heat and stir constantly until the mixture thickens, about 10 minutes.

Assemble the Pie

  • Place the whole strawberries that were set aside in the graham cracker crust. Pour the strawberry pie filling over the strawberries.

Chill

  • Refrigerate the pie for 3–4 hours until it’s fully set.

Cool Whip

  • Right before serving, spread Cool Whip or whipped topping over the pie.

Notes

Doneness Cues

  • The filling should be thick and no longer watery before pouring.
  • Pie should feel firm to the touch after chilling.
  • Slices should hold shape without collapsing.

Storage

  • Fridge: Store it covered for up to 3–4 days.
  • Freezer: Possible, but the texture softens after thawing.
  • Make-ahead: Best made the day before for a full set.

Success Tips

  • Chill the crust fully before adding filling.
  • Stir constantly as it thickens to avoid lumps.
  • Do not rush chill time because this is what sets the pie.
  • Use fresh strawberries for the best structure.
