- 12 oz coleslaw mix
- 2 packs ramen noodles, chicken or soy sauce flavored
- ¼ cup green onions, thinly sliced
- ½ cup roasted sunflower seeds
- ¼ cup toasted sesame seeds
- ¾ cup olive oil
- 4 tbsp apple cider vinegar
- 4 tbsp granulated sugar
- ½ tbsp black pepper
Remove the noodles from the two packs of ramen and set the seasoning packets aside. Break up the ramen noodles into small pieces and add them to a large bowl.
In a small bowl, combine the dressing ingredients: olive oil, apple cider vinegar, granulated sugar, black pepper, seasoning from ONE packet of ramen. Stir to combine.
To the large bowl with ramen noodles, add the coleslaw mix, green onions, sunflower seeds, and sesame seeds. Toss to combine.
Pour the dressing over the salad and mix well to evenly combine. Serve immediately or cover and store in the fridge until ready to eat.
- Toast the ramen noodles before adding them to the salad for extra crunch and flavor. Heat them in a skillet over medium heat until golden brown or in the oven at 350ºF for 5-10 minutes.
