- 4 chicken breasts boneless, skinless
- ¾ tsp salt
- ¼ tsp pepper
- ½ cup pesto, store-bought or homemade
- 8 slices fresh mozzarella cheese
- 8 slices tomato
Preheat oven to 400℉. Line a baking sheet with foil.
Season the chicken breasts with salt and pepper and place on the prepared baking sheet.
Spread the pesto evenly over the tops of the chicken breasts.
Bake for about 20 minutes depending on the thickness of your chicken or until the internal temperature reaches 165℉ in the thickest part of the chicken.
Remove from the oven and place mozzarella and tomato slices on top of each chicken breast. Return to the oven for another 5 minutes. Remove from the oven and let the chicken rest for 5 minutes before slicing and enjoying.
