Ingredients

  • 4 chicken breasts boneless, skinless
  • ¾ tsp salt
  • ¼ tsp pepper
  • ½ cup pesto, store-bought or homemade
  • 8 slices fresh mozzarella cheese
  • 8 slices tomato

Instructions

  • Preheat oven to 400℉. Line a baking sheet with foil.
  • Season the chicken breasts with salt and pepper and place on the prepared baking sheet.
  • Spread the pesto evenly over the tops of the chicken breasts.
  • Bake for about 20 minutes depending on the thickness of your chicken or until the internal temperature reaches 165℉ in the thickest part of the chicken.
  • Remove from the oven and place mozzarella and tomato slices on top of each chicken breast. Return to the oven for another 5 minutes. Remove from the oven and let the chicken rest for 5 minutes before slicing and enjoying.
