- 4 lb Yukon gold potatoes, peeled and diced
- 6 tbsp butter, unsalted
- 1 cup sour cream
- ½ cup milk
- 2 cups cheddar cheese, shredded
- 1 lb bacon, cooked and crumbled
- salt and pepper, to taste
Preheat the oven to 350℉.
Add the diced potatoes to a large pot, add plenty of salt, and fill the pot with enough water to cover the potatoes.
Bring the water to a boil and cook, uncovered, for about 15 minutes, or until the potatoes are fork-tender.
Drain the potatoes well, then return to the pot.
Add the butter, milk, and sour cream to the potatoes and mash well until smooth and creamy.
Add in half of the cheese and all but 1/4 cup of crumbled bacon. Mix to combine.
Spread the mashed potato mixture into a casserole dish. Sprinkle with the remaining cheese and remaining crumbled bacon.
Bake for 20-25 minutes. A few minutes before removing it from the oven, turn on the broil and broil for 3-5 minutes to get the cheese a nice golden-brown.
