Ingredients

  • cups rolled oats
  • 1 ripe banana ,mashed
  • 2 tbsp almond butter
  • 2 tbsp maple syrup
  • 2 tbsp unsweetened coconut flakes
  • 2 tbsp chopped dates
  • Cocoa powder, for dusting (optional)

Instructions

  • Step 1: Combine the Ingredients
Add the rolled oats, mashed banana, almond butter, maple syrup, coconut flakes, and chopped dates to a large mixing bowl. Stir everything together until fully combined and evenly coated.
The mixture should start forming a thick, sticky texture that holds together when pressed between your fingers.
  • Step 2: Adjust the Texture if Needed
If the mixture feels too wet or sticky, add a small amount of rolled oats until it becomes easier to handle. But if it feels too dry or crumbly, add a bit more almond butter or a spoonful of mashed banana. This helps create softer almond butter energy balls that stay together after chilling.
  • Step 3: Roll Into Balls
Scoop small portions of the mixture and roll them between your palms until smooth and evenly shaped. Continue until all the mixture has been used.
For evenly sized date balls, use a tablespoon or small cookie scoop.
  • Step 4: Add the Cocoa Powder
Lightly dust the finished almond butter date balls with cocoa powder if desired. This adds a richer flavor and helps reduce stickiness on the outside.
  • Step 5: Chill Before Serving
Place the energy bites in the refrigerator for at least 20 minutes before serving. Chilling helps the balls firm up while keeping the center soft and chewy.

Notes

Doneness Cues

  • The mixture should feel soft and slightly sticky but still easy to roll into smooth balls.
  • The balls should hold their shape without cracking or falling apart.
  • After chilling, the outside should feel firmer while the center stays chewy and tender.
  • If the mixture sticks to your hands too much, add a little more oats before rolling.
  • If the balls crumble while shaping, add a small spoonful of almond butter or mashed banana to increase moisture.

Storage Notes

  • Store the almond butter date balls in an airtight container in the refrigerator for up to 1 week.
  • Freeze them for up to 2 months for longer storage.
  • Let frozen date balls sit at room temperature for a few minutes before serving for the best texture.
