Pesto Caprese Baked Chicken

Basil pesto topped chicken breasts get a caprese flair with fresh mozzarella and tomato slices! An easy baked chicken recipe that is fancy enough for company!

Ingredients

  • 4 Chicken breasts boneless, skinless
  • 3/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 1/2 cup Pesto
  • 8 slices Mozzarella cheese
  • 8 slices Tomato

Instructions

  • Preheat oven to 400 degrees. Line a baking sheet with sides with foil.
  • Season chicken breasts with salt and pepper and place on prepared baking sheet.
  • Spread pesto evenly over the top of chicken breasts.
  • Bake for about 20 minutes depending on the thickness of your chicken.
  • Remove from oven and place mozzarella and tomato slices on top of chicken. Return to oven for another 5-10 minutes or until internal temperature of chicken reaches 165 degrees.
