8 ounces cream cheese, softened to room temperature
¼ cup mozzarella cheese, shredded
1 cup shredded parmesan cheese
1 cup artichokes, drained and chopped
3 tablespoons minced garlic
2 cups milk
14 ounces frozen spinach, thawed and excess water squeezed out
1 teaspoon garlic powder
½ teaspoon basil and garlic seasoning
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the cream cheese, parmesan cheese, mozzarella cheese, minced garlic, garlic powder, basil and garlic seasoning, salt, and pepper. Mix until well blended.
Fold in the chopped artichokes and squeezed-dry frozen spinach into the cheese mixture until evenly distributed.
Transfer the mixture into a baking dish and spread evenly.
Cover the baking dish with aluminum foil or a lid.
Bake in the preheated oven for 25 minutes, then remove the cover and bake for an additional 5 minutes or until the top is slightly golden and bubbly.
Remove the dip from the oven and let it cool for a few minutes before serving..
Notes
Personal touches make a dish special. Try adding finely minced green onions or swapping some of the parmesan for asiago cheese for a different flavor profile. If you're aiming for a lighter version, mix in Greek yogurt or sour cream instead of mayonnaise.
