Ingredients

  • 1 pound Penne Pasta
  • 4 tablespoons Butter (Divided)
  • 1 pound Chicken Breast Meat (Cut Into 1” Chunks)
  • 1/2 teaspoon Kosher Salt
  • 1/4 teaspoon Ground Black Pepper
  • 1 Red Onion, Chopped
  • 1 pound Shiitake Mushrooms, Sliced
  • 2 cloves Garlic, Minced
  • 1 cup Madeira Wine (or substitute with dry sherry wine, dry port wine, or Marsala)
  • 1 cup Chicken Broth
  • 1/2 cup Sour Cream (or use fat-free sour cream for fewer calories)
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, plus extra for garnish
  • 1 tablespoon Flour

Instructions

Preparation:

  • Boil the penne pasta in hot water for approximately 10 minutes or according to the instructions on the pasta box. Drain and set aside.
  • Season chicken with salt and pepper.
  • Cut red onion into medium-diced pieces and mince the garlic.

Cooking:

  • In a skillet, melt 1 tablespoon of butter over medium-high heat. Cook chicken until no longer pink, about 5-6 minutes. Remove chicken from the pan and set aside.
  • Add another tablespoon of butter to the pan. Cook onions, garlic, and mushrooms until caramelized, about 5-7 minutes. Remove from the pan and set aside with the chicken and boiled pasta.
  • In the same pan, melt 1-2 tablespoons of butter. Stir in flour and cook until it forms a paste.
  • Add Madeira wine and chicken broth. Stir until the liquid reduces to ¾ of the original amount.
  • Add sour cream, parmesan cheese, and heavy cream, stirring continuously until well combined.
  • Return chicken, mushrooms, onions, and garlic to the pan. Simmer for 3-4 minutes.
  • Add boiled pasta to the sauce, gently coating the pasta. Season with additional salt and pepper to taste.

Notes

  • To reduce calories, use fat-free sour cream and garnish with parmesan cheese instead of adding it to the sauce.
  • If shiitake mushrooms are unavailable, substitute with crimini mushrooms and cook them brown for enhanced flavor.
