Ingredients

  • 1 Onion, diced
  • 2 tablespoons Olive oil
  • 1 cup Celery, chopped
  • 2 Bay leaves
  • 2 Carrots, sliced
  • 1 Zucchini, sliced
  • 3 cloves Whole garlic, minced
  • 8 cups Water
  • 2 Chicken bouillon cubes
  • 1 Whole chicken
  • 2 cups Egg noodles
  • Fresh Parsley, chopped
  • Salt and pepper, to taste
  • Cumin, to taste
  • Curcuma, to taste

Instructions

1. Preparation:

  • Shred the whole chicken into squares, using two spoons or your hands.
  • Wash, peel, and dice the veggies.

2. Cooking the Soup:

  • In a large cast iron pan or dutch oven, melt butter with a tablespoon of olive oil over medium-high heat.
  • Add diced onion, celery, carrots, zucchini, and bay leaves. Cook for 3-4 minutes, stirring occasionally.
  • Add minced garlic and cook for another minute until aromatic.
  • Stir in chicken cubes, bay leaves, cumin, pepper, Curcuma, and salt. Bring to a boil, then reduce to a simmer.

3. Adding Chicken and Noodles:

  • After 10 minutes, add the shredded chicken, chicken bones, and egg noodles to the pot.
  • Continue cooking for an additional 15 minutes or until the noodles are tender.

4. Finish:

  • Remove bay leaves and chicken bones.
  • Adjust seasoning with salt, pepper, cumin, and Curcuma to taste.
  • Sprinkle chopped fresh parsley on top.

Notes

  • For a richer flavor, use a whole chicken with bones.
  • Customize the seasoning to your liking by adjusting the cumin and Curcuma.
  • Save time by using a rotisserie chicken and store-bought chicken broth.
