- 1 Onion, diced
- 2 tablespoons Olive oil
- 1 cup Celery, chopped
- 2 Bay leaves
- 2 Carrots, sliced
- 1 Zucchini, sliced
- 3 cloves Whole garlic, minced
- 8 cups Water
- 2 Chicken bouillon cubes
- 1 Whole chicken
- 2 cups Egg noodles
- Fresh Parsley, chopped
- Salt and pepper, to taste
- Cumin, to taste
- Curcuma, to taste
1. Preparation:
Shred the whole chicken into squares, using two spoons or your hands.
Wash, peel, and dice the veggies.
2. Cooking the Soup:
In a large cast iron pan or dutch oven, melt butter with a tablespoon of olive oil over medium-high heat.
Add diced onion, celery, carrots, zucchini, and bay leaves. Cook for 3-4 minutes, stirring occasionally.
Add minced garlic and cook for another minute until aromatic.
Stir in chicken cubes, bay leaves, cumin, pepper, Curcuma, and salt. Bring to a boil, then reduce to a simmer.
3. Adding Chicken and Noodles:
After 10 minutes, add the shredded chicken, chicken bones, and egg noodles to the pot.
Continue cooking for an additional 15 minutes or until the noodles are tender.
4. Finish:
Remove bay leaves and chicken bones.
Adjust seasoning with salt, pepper, cumin, and Curcuma to taste.
Sprinkle chopped fresh parsley on top.
- For a richer flavor, use a whole chicken with bones.
