Prepare a baking sheet with parchment paper
Preheat oven to 400 degrees
In a small mixing bowl, whisk together the honey and mustard
In a small dish, beat together egg and water, set aside
On a floured surface, unfold puff pastry
Cut out four 4” circles out of the puff pastry
Using a well floured rolling pin, roll out the circles until thin and about 6.5” wide
Repeat steps 5 and 6 for second puff pastry sheet
On each circle, add 2 heaping tablespoons of ham and 1 heaping tablespoon of cheese
Drizzle 1 teaspoon of mustard mixture over each filled pastry circle
Using a basting brush, spread egg wash onto edge of each circle
Fold each circle in half and seal by pressing a fork around the edges
Brush egg wash or mustard sauce over the top of each of the pastries
Bake for 18-20 minutes or until golden brown
Allow to cool on pantry for 15 minutes before serving.
