The amount of meat per sauce is dependent on how "saucy" you like your pork to be. When we make pork bbq sandwiches, we use closer to 2 pounds of meat per batch of sauce, so the sandwiches don't drip as much. When we serve the shredded pork over cornbread or baked potatoes, we use less meat so that there's extra sauce to soak into the cornbread and potatoes.
