Vegan Chai Spiced Popcorn

- 12 cups air popped popcorn
- 1/4 cup coconut oil OR vegan butter
- 14 cup brown sugar
- 1/4 cup agave
- 1 tsp baking soda
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp allspice
Air pop your popcorn and place in large bowl. Bring coconut oil or vegan butter, brown sugar and agave to boil in small saucepan on stove.
Boil for 3 - 5 minutes, stirring constantly until your candy thermometer reaches at least 250 degrees but no more than 300 degress. Remove from heat, stir in baking soda and vanilla. (watch it sizzle and thicken up!) Stir in remaining spices.
Pour mixture over popcorn and stir well.
Spread popcorn on a large parchment lined rimmed baking sheet. Bake at 250 degrees for 45 minutes stirring every 15 minutes.
When done, spread out to cool on wire baking racks. Store in an airtight container in a cool dry space.
