  • ½ cup chicken stock
  • 1 tsp creole seasoning
  • 1 tsp lemon pepper seasoning
  • 1 tsp dried thyme
  • 1 tsp celery salt
  • 2 garlic cloves, minced
  • 1 tbsp Louisiana hot sauce
  • 1 tbsp yellow onion, finely chopped
  • 2 tbsp fresh garlic, minced
  • 2 tbsp sugar (balances the acidity)
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1 cup seafood seasoning
  • 2 cups chicken broth

Instructions

Step 1: Melt Butter

  • Melt the butter in a stock pot or large skillet over medium heat to craft your sauce. 

Step 2: Add Condiments

  • Once the butter has melted, add the diced yellow onion and minced fresh garlic, sautéing until they become translucent and fragrant. Next, stir in the cayenne pepper, dried thyme, creole seasoning, lemon pepper seasoning, and celery salt, allowing the spices to meld with the butter and create a rich base for your sauce.

Step 3: Add Stock

  • Gradually pour in the ½ cup chicken stock, stirring continuously as the sauce thickens and the flavors intensify. 

Step 4: Add More Ingredients

  • After about 15 minutes of simmering, incorporate the lemon juice, parsley, lemon zest, and Louisiana hot sauce. Continue to cook for 5 minutes to ensure all ingredients are well combined. Your seafood boil sauce is now ready to be generously ladled over freshly cooked seafood or used as a delectable dipping sauce.

Notes

  • If your sauce is too thick, adding a splash of chicken stock can help achieve a buttery sauce with a smoother consistency during the cooking process. Conversely, if the sauce is too thin, let it simmer for a few extra minutes or add a small amount of roux to thicken it.
  • Seasonal ingredients like fresh herbs can make a big difference in the final taste of your sauce. In colder months, frozen crab can be a convenient alternative to fresh seafood, though the former might require a slight adjustment in cooking times. 
  • Whether using fresh or frozen shrimp, ensure they are thoroughly cleaned and deveined for the best results.
