Ingredients

Cake

  • 1/2 cup Butter softened
  • 1.5 cups Sugar
  • 2 Eggs
  • 1 tsp. Vanilla Extract
  • 1 cup Sour Cream
  • 2 cups Flour
  • 1 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 3 Bananas mashed

Cream Cheese Frosting

  • 8 oz. Cream Cheese softened
  • 1/4 cup Butter softened
  • 1 tsp. Vanilla Extract
  • 4 cups Powdered Sugar
  • 1-3 Tbsp. Milk

Instructions

Cake

  • Preheat oven to 350 degrees. Grease a 13x9 pan and set aside.
  • In a stand mixer, cream butter and sugar until very light and fluffy.
  • Add eggs, sour cream and vanilla extract and beat well to combine.
  • In a separate bowl, combine flour, a teaspoon baking soda and salt until combined. On low, stir into butter mixture just until combined and no flour streaks remain.
  • Add mashed bananas and stir on low until combined. Spread batter into prepared pan.
  • Bake for 30-35 minutes until top is golden brown and a toothpick inserted in center comes out clean. Cool completely.

Cream Cheese Frosting

  • Beat cream cheese and butter until light and fluffy and no clumps remain.
  • Add powdered sugar and vanilla extract and combine well.
  • Add 1 tablespoon of milk and mix. You can add additional milk if you need to thin it out.
  • Spread frosting on cooled banana cake.
