Printable Tomato & Cucumber Salad Recipe Card

Refreshing summer salad packed with garden fresh tomatoes and cucumbers and tossed with a light homemade vinaigrette.

Ingredients

  • 9 ripe plum tomatoes
  • 1 English cucumber
  • ½ red onion, diced
  • 2 tbsp parsley, chopped
  • 2 tbsp cilantro, chopped
  • ½ tsp kosher salt

Dressing Ingredients:

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tsp brown sugar
  • 1 ½ tsp garlic, minced (about 3 cloves)
  • 1 tsp oregano
  • 1 tsp kosher salt

Instructions

  • In a small bowl, add all of the dressing ingredients and whisk to combine. Set aside while you prepare the salad.
  • Dice the tomatoes into large chunks, removing the seeds. Add to a large bowl.
  • Cut the cucumber in half lengthwise, then slice the 2 halves into 1/4" slices. Add to the bowl with tomatoes.
  • Dice the red onion, and chop the parsley and cilantro and add it all to the bowl. Sprinkle with salt and toss the ingredients.
  • Pour the dressing over the salad and toss well to combine.
  • Refrigerate for at least an hour before serving.
