Printable Tomato & Cucumber Salad Recipe Card
Refreshing summer salad packed with garden fresh tomatoes and cucumbers and tossed with a light homemade vinaigrette.

- 9 ripe plum tomatoes
- 1 English cucumber
- ½ red onion, diced
- 2 tbsp parsley, chopped
- 2 tbsp cilantro, chopped
- ½ tsp kosher salt
Dressing Ingredients:
- ½ cup olive oil
- ¼ cup red wine vinegar
- 2 tsp brown sugar
- 1 ½ tsp garlic, minced (about 3 cloves)
- 1 tsp oregano
- 1 tsp kosher salt
In a small bowl, add all of the dressing ingredients and whisk to combine. Set aside while you prepare the salad.
Dice the tomatoes into large chunks, removing the seeds. Add to a large bowl.
Cut the cucumber in half lengthwise, then slice the 2 halves into 1/4" slices. Add to the bowl with tomatoes.
Dice the red onion, and chop the parsley and cilantro and add it all to the bowl. Sprinkle with salt and toss the ingredients.
Pour the dressing over the salad and toss well to combine.
Refrigerate for at least an hour before serving.
