Ingredients

  • 1 cup brown or green lentils, cooked
  • 1 ½ cups sweet potato, cooked and diced
  • ½ cup breadcrumbs
  • 1 clove garlic, minced
  • ½ onion, minced
  • ½ tsp sweet paprika
  • ½ tsp smoked paprika
  • ½ tsp salt
  • dash of pepper

Instructions

  • Combine all ingredients in a large bowl and use hands to mix well.
  • Form into evenly sized patties.
  • Heat a skillet on medium heat with a small layer of vegetable oil on the bottom.
  • Fry each fritter for about 5 minutes on each side, or until golden and crispy and cooked through.

Notes

  • If the mixture is sticking to your hands, dampen your hands with a bit of water to help form the patties.
