- 1 cup brown or green lentils, cooked
- 1 ½ cups sweet potato, cooked and diced
- ½ cup breadcrumbs
- 1 clove garlic, minced
- ½ onion, minced
- ½ tsp sweet paprika
- ½ tsp smoked paprika
- ½ tsp salt
- dash of pepper
Combine all ingredients in a large bowl and use hands to mix well.
Form into evenly sized patties.
Heat a skillet on medium heat with a small layer of vegetable oil on the bottom.
Fry each fritter for about 5 minutes on each side, or until golden and crispy and cooked through.
- If the mixture is sticking to your hands, dampen your hands with a bit of water to help form the patties.
