Ingredients

  • ¼ cup unsalted cashews
  • ¼ cup boiling water
  • 1 frozen banana
  • 10 frozen strawberries
  • ¼ cup 1/4 cup unsweetened vanilla nut - based milk (I used Silk brand of Unsweetened Vanilla Cashew Milk)

Instructions

  • Place the cashews in a bowl and cover with boiling water. Let them soak for 20 minutes, then drain (for super–smooth, soak overnight!).
  • Add the soaked cashews, frozen banana, frozen strawberries, and nut-based milk to a blender.
  • Blend until it reaches a 'whip' consistency. Stop to scrape down the sides if needed.
  • Serve immediately for a soft whipped texture or freeze briefly for a firmer consistency.

Notes

  • Frozen fruit creates the thickest texture.
  • Properly soaked cashews help prevent graininess.
  • Add small amounts of milk if the blender struggles to mix the ingredients.
  • A high-speed blender creates the smoothest consistency.
