Ingredients
1 pound ground turkey
1 tablespoon oil
1 medium onion, chopped
1 jalapeno, deseeded and finely chopped
1 cup edamame (fresh or frozen)
4 cups beef broth
12 ounces tomato paste
15 ounces canned kidney beans, drained and rinsed
15 ounces canned garbanzo beans, drained and rinsed
1 small carrot, chopped (about ¾ cup)
½ cup fresh or frozen corn
1 teaspoon oregano
1 teaspoon garlic powder
1 tablespoon cumin
½ teaspoon cayenne pepper (optional)
½ teaspoon black pepper
Salt to taste
Optional:
Additional jalapeno for extra heat
Extra ground turkey
1 tablespoon extra cumin for added flavor
Instructions
Preparing the Turkey:
In the bottom of your Dutch oven or pot, sauté ground turkey until browned and no longer pink.
Mixing the Ingredients:
In a pot or Instant Pot, combine cooked turkey, onion, jalapeno, edamame, beef broth, tomato paste, kidney beans, garbanzo beans, carrot, corn, oregano, garlic powder, cumin, cayenne pepper (optional), black pepper, and salt.
Stir well to ensure even distribution of ingredients.
Simmer Together Until Done
Bring chili to a boil.
Simmer for about 45 minutes to 1 hour until it reaches the desired thickness.
Stir occasionally with a wooden spoon.
Test for flavor and doneness. Add more seasoning and simmer a little longer if desired.
Serve hot with your favorite sides and chili toppings.
