Printable Oil-Free Kale Salad with Almond Butter Salad Dressing Recipe Card
Massaged kale becomes tender and irresistible once it's paired with a creamy, nutty, oil-free almond butter dressing.

Almond Butter Salad Dressing
- 3 tbsp creamy almond butter
- 1 tbsp water
- 3 tbsp freshly squeezed lime juice
- 1 tbsp dijon mustard
- ½ tbsp maple syrup
- 1 tsp garlic, minced
- ½ tsp ground chili paste, Sambal Oelek
- ¼ tsp black pepper
Kale Salad
- 1 large bunch of kale, roughly chopped
- assorted chopped vegetables: green onions, red onion, red pepper, carrot, cucumber or broccoli slaw
- ¼ cup raw or lightly salted almonds, roughly chopped for topping
Kale Salad:
Destem the kale, chop and place in a large bowl. Sprinkle lightly with salt and massage the salt into the kale with your hands for a few minutes under the leaves darken in color and soften.
Add the dressing in small amounts into the bowl. Massage it into the kale. Use as much or as little dressing as you would like. I used about ¾ of the dressing recipe.
Place the salad in the refrigerator and marinate for a few hours.
Remove from the fridge when you're ready to enjoy and top with vegetable toppings of your choice and chopped almonds.
- for a thicker dressing use 1 tbsp of water, for thinner dressing use 2-3 tbsp of water.
