Ingredients

  • 2 cups flour
  • 1 cup granulated sugar
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs, room temperature
  • 2 cups buttermilk, room temperature
  • 1 tbsp melted butter, plus additional butter for cooking

Instructions

  • Preheat a pancake griddle to 350℉ or warm a cast iron skillet over medium heat.
  • In a large bowl, combine the dry ingredients: flour, sugar, baking soda, and salt. Whisk to combine.
  • In a medium bowl, whisk together the 2 eggs and buttermilk until just combined.
  • Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix just until combined, being careful not to overmix.
  • Stir in the melted butter just enough to incorporate.
  • Let the batter rest for 5-10 minutes.
  • Using a ladle, pour the batter onto the preheated cooking surface.
  • Cook the pancakes for 3-5 minutes, or until the edges look set and bubbles begin to form on the surface.
  • Flip the pancakes and cook for an additional 2-3 minutes on the other side, until golden brown.
  • Serve warm with your favorite toppings.
