Preheat a pancake griddle to 350℉ or warm a cast iron skillet over medium heat.
In a large bowl, combine the dry ingredients: flour, sugar, baking soda, and salt. Whisk to combine.
In a medium bowl, whisk together the 2 eggs and buttermilk until just combined.
Make a well in the center of the dry ingredients and pour in the wet ingredients. Mix just until combined, being careful not to overmix.
Stir in the melted butter just enough to incorporate.
Let the batter rest for 5-10 minutes.
Using a ladle, pour the batter onto the preheated cooking surface.
Cook the pancakes for 3-5 minutes, or until the edges look set and bubbles begin to form on the surface.
Flip the pancakes and cook for an additional 2-3 minutes on the other side, until golden brown.
Serve warm with your favorite toppings.
