- 2 chicken breasts cooked and chopped or shredded
- 1 head romaine lettuce, chopped
- 1 medium tomato, diced
- 1 avocado, sliced or diced
- 2 hard boiled eggs, sliced
- 6 slices bacon
- 1 cup corn
- ½ cup red onion, thinly sliced
- ½ cup cheddar cheese, shredded
In a frying pan, cook the bacon over medium-high heat until crispy. Remove to a paper towel-lined plate.
Reserve the bacon grease in the pan and cook the corn until slightly charred, about 5-10 minutes.
Chop the lettuce and place in a big serving bowl. Arrange all the remaining ingredients on top of the lettuce, including the chicken, bacon, and corn. Drizzle with your favorite dressing and enjoy!
- You can use rotisserie chicken in place of the grilled chicken for a faster dinner!
- Traditional Cobb Salad uses blue cheese crumbles in place of the cheddar cheese, but feel free to use whichever is your favorite.
