Ingredients

  • 1 lb Carrots
  • 3 tbsp Butter, unsalted
  • 3 tbsp Brown Sugar
  • 1 tsp Garlic Powder
  • 1 tsp Parsley
  • ΒΌ tsp Salt
  • β…› tsp Black Pepper
  • 3 tbsp Honey

Instructions

  • Preheat oven to 425℉.
  • Wash and peel carrots. Slice large carrots into 4 long pieces and smaller carrots into 2 small pieces. Make all pieces as evenly sliced as possible for even cooking.
  • In a microwave-safe bowl, melt the butter. Add brown sugar, garlic powder, parsley, salt, and pepper, and mix well. Drizzle over the carrots and toss to evenly coat them.
  • Spread the carrots evenly in a single layer on a baking tray. Roast for 15 minutes.
  • Remove from the oven, flip the carrots, drizzle with honey, and bake for another 10-15 minutes. Keep an eye on them in these final minutes of cooking to avoid burning the honey.

Notes

  • You can also leave the carrots whole for an easier prep and a pleasing display. Wash and peel them, then proceed with the recipe. You may need to bake them for a few minutes longer.
  • The carrots are done when they can easily be pierced with a fork.
  • Do not overcrowd the baking tray. If needed, spread the carrots onto two baking trays to allow the carrots to roast rather than steam.
