Pecan Pie Granola

- 3 cups rolled old fashioned oats (use gluten free if needed)
- 2/3 cup chopped pecan pieces
- 1/3 cup pure maple syrup
- 1/3 cup
- 3 Tblsp of Nut Based Milk (I used unsweetened vanilla almond)
- 3 Tblsp unsweetened applesauce
- 1 Tbsp
- 1 tsp vanilla extract
- 1 tsp almond extract*
- 1/2 tsp of salt
Preheat oven to 325 degrees and line a large rimmed baking sheet with parchment paper.
Place oats in large mixing bowl. Add pecans and salt and toss to distribute evenly.
In small saucepan combine maple syrup, vanilla protein powder, nut based milk, maca powder, unsweetened applesauce and extracts. Over medium heat, melt ingredients together - the mixture will be thick. Pour over oat mixture and stir until well combined.
Spread evenly on parchment lined baking sheet. Bake for 45 - 55 minutes stirring every 15 minutes.
Cool on wire rack. Store in an airtight container in fridge or on counter. (I prefer to store mine in the fridge)
- *you can omit the almond extract and substitute with another teaspoon of vanilla extract (so you would use 2 tsp vanilla extract total)
