Easy Vegan Loaded Home Fries

Loaded home fries are vegan, gluten free and oil free; perfect for brunch or brinner!

Ingredients

  • ½ package frozen diced potatoes
  • 1 cup sliced button mushrooms
  • ½ of a green pepper, diced
  • ½ of a red pepper, diced
  • 2 Tblsp white onion
  • Salt and Pepper
  • Dairy free cheese (1/4 cup or less)

Instructions

  • In a medium sized skillet, water sauté your mushrooms, green and red pepper and onion for 3 - 5 minutes until tender.
  • Add potatoes and spread out evenly so potatoes get crisp! Let potatoes cook 4-5 minutes then flip and cook for another 4-5 minutes.
  • Test your potatoes for doneness, and if needed cook a few minutes longer. Add a splash of water if it starts to burn.
  • Remove from stovetop and top with a small amount of dairy free cheese
  • Serve immediately. Store leftovers in fridge.
