- ½ package frozen diced potatoes
- 1 cup sliced button mushrooms
- ½ of a green pepper, diced
- ½ of a red pepper, diced
- 2 Tblsp white onion
- Salt and Pepper
- Dairy free cheese (1/4 cup or less)
In a medium sized skillet, water sauté your mushrooms, green and red pepper and onion for 3 - 5 minutes until tender.
Add potatoes and spread out evenly so potatoes get crisp! Let potatoes cook 4-5 minutes then flip and cook for another 4-5 minutes.
Test your potatoes for doneness, and if needed cook a few minutes longer. Add a splash of water if it starts to burn.
Remove from stovetop and top with a small amount of dairy free cheese
Serve immediately. Store leftovers in fridge.
