Caramelized Onion, Bacon & Blue Cheese Tart

This easy appetizer is only 4 ingredients but packed with flavor! Buttery puff pastry is topped with caramelized onions, bacon and blue cheese for a party food that is always a hit! This recipe is freezer-friendly so you can make it ahead of time too!

Ingredients

  • 1 sheet Frozen Puff Pastry
  • 2 medium Onions sliced
  • 12 slices Bacon
  • 4 oz. Blue Cheese

Instructions

  • Preheat oven to 400. 
  • Using kitchen shears, cut your bacon into 1" pieces. Add bacon to a cast iron skillet and cook over medium heat until just starting to crisp. Transfer cooked bacon to a paper towel.
  • Drain most of the bacon fat out of the skillet, leaving about 2 tablespoons in the pan. Add sliced onions to the pan and cook over medium heat, stirring frequently. Continue cooking until brown and caramelized, anywhere from 15-40 minutes depending on how well done you like your onions.
  • While the onions are cooking, line a cookie sheet with parchment paper. Remove puff pastry from freezer and place on parchment paper to thaw. 
  • When onions are done cooking, unroll the puff pastry. Top with caramelized onions, bacon and bleu cheese. 
  • Bake for 15-20 minutes until the puff pastry is golden brown. Cut into slices and serve!

Notes

If you are not a fan of blue cheese, you can substitute goat cheese or boursin.
This appetizer can be served hot or at room temperature.
If you are making ahead to freeze, assemble the puff pastry with all of the toppings. Transfer cookie sheet to a freezer until the tart is frozen (about 30 minutes). Place tart in freezer bag until ready to use. On the serving day, transfer frozen tart to a parchment lined cookie sheet. Allow to thaw for about 20-40 minutes and then proceed to bake as the recipe directs.
