- 1 cup roasted almonds
- 4 cups curly kale, cleaned, washed, and cut
- 2 cups green cabbage, washed and cut
- Apple Dijon dressing
Optional/Additional Ingredients:
- Quinoa for added nutrition

- Apples for added crunch and sweetness
- Salmon
- Roasted pumpkin or sunflower seeds for added antioxidants
- Cheddar or parmesan cheese
Apple Dijon Dressing:
- ½ cup extra virgin olive oil
- ¼ teaspoon black pepper
- 2 tablespoons apple cider vinegar
- ½ teaspoon sea salt
- 1 tablespoon distilled vinegar
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon white wine
1. Apple Dijon Dressing:
Mix apple cider vinegar with maple syrup.
Add lemon juice, distilled vinegar, and white wine.
Stir the mixture.
Add Dijon mustard, sea salt, and black pepper. Whisk until even.
Slowly add olive oil while whisking. If needed, transfer to a jar and shake until even.
5. Optional/Additional Ingredients:
Prepare quinoa, meat, chicken, apples, salmon, roasted pumpkin, or sunflower seeds as per preference.
6. Mix:
Put diced kale in a bowl, add apple Dijon dressing, and mix until kale softens.
Let it sit for a moment, then add cut-up cabbage.
Mix until the greens absorb the sauce.
Let the salad sit for 10 minutes.
