- 500g skinless and boneless chicken, cut into small pieces
- ½ cup pickle juice (dill pickle juice recommended)
- ¼ cup milk (whole or low-fat)
- 2 tablespoons powdered sugar
- 2 tablespoons dry chicken rub
- 1 tablespoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika (optional for spice)
- Olive or sunflower oil
- ¼ teaspoon seasoned salt
1. Cut and Clean the Chicken
2. Marinate the Chicken
In a bowl, combine pickle juice and milk.
Place chicken in the bowl or a ziplock bag to marinate for 30 minutes (or overnight for stronger flavor).
After marination, remove chicken and place on paper towels to dry excess marinade.
4. Make the Seasoning
In a bowl, combine salt, pepper, paprika (if desired), garlic powder, powdered sugar, and seasoned salt.
Add chicken to the bowl; mix to coat evenly.
5. Cook the Chicken
Check if the oil is hot, then add chicken pieces one by one.
Cook for 8-10 minutes, tossing gently to cook evenly.
Remove and Serve
As chicken turns golden, remove and place on a pan with paper towels to absorb excess oil.
Let them rest for 60-90 seconds.
Serve with honey mustard sauce or your favorite dipping sauce.
- Choose pickle juice with less than 150mg of sodium for optimal flavor.
- Use powdered sugar for a nice crust; avoid brown or granulated sugar.
- Adjust spice level by adding paprika to the seasoning mix.
- Ensure guests or kids can tolerate spice if making the nuggets spicy.
