For the Meatloaf:
- 1 pound ground beef
- 2 pounds ground pork
- 2 diced green bell peppers
- ⅓ cup shredded carrots
- ½ cup minced onions
- 3 cloves minced garlic
- ¼ cup dry breadcrumbs
- 3 large eggs
- ½ cup milk
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon black pepper
- A pinch of granulated sugar
- ½ teaspoon paprika
- 1 teaspoon oregano
- Fresh thyme, for seasoning
For the Mushroom Gravy:
- 1 ½ cups sliced mushrooms
- 2 tablespoons butter
- 1 teaspoon minced garlic
- 2 tablespoons all-purpose flour
- 1 3/4 cups beef broth
- 1 teaspoon black pepper
- 1 sprig minced parsley
1. Saute All the Veggies:
Heat oil in a skillet and saute minced onion, garlic, carrots, and bell peppers until softened. Set aside.
2. Prepare the Meatloaf Batter:
In a mixing bowl, beat eggs and add all the meatloaf ingredients. Mix well, fold in the sauteed veggies, and coat the mixture with breadcrumbs.
