Ingredients

For the Meatloaf:

  • 1 pound ground beef
  • 2 pounds ground pork
  • 2 diced green bell peppers
  • cup shredded carrots
  • ½ cup minced onions
  • 3 cloves minced garlic
  • ¼ cup dry breadcrumbs
  • 3 large eggs
  • ½ cup milk
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 teaspoon black pepper
  • A pinch of granulated sugar
  • ½ teaspoon paprika
  • 1 teaspoon oregano
  • Fresh thyme, for seasoning

 For the Mushroom Gravy:

  • 1 ½ cups sliced mushrooms
  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 2 tablespoons all-purpose flour
  • 1 3/4 cups beef broth
  • 1 teaspoon black pepper
  • 1 sprig minced parsley

Instructions

1. Saute All the Veggies:

  • Heat oil in a skillet and saute minced onion, garlic, carrots, and bell peppers until softened. Set aside.

2. Prepare the Meatloaf Batter:

  • In a mixing bowl, beat eggs and add all the meatloaf ingredients. Mix well, fold in the sauteed veggies, and coat the mixture with breadcrumbs.

3. Bake the Meatloaf:

  • Grease a loaf pan with butter, add the meat mixture, and press gently. Bake in a preheated oven at 350°F (175°C) for 1 hour. Let it rest for 30 minutes.

4. Make the Mushroom Gravy:

  • Heat sauteed vegetables in butter. Add garlic and onion, cook for a minute, then add beef broth and flour. Whisk until thickened. Season with salt, dried oregano, and pepper. Cook for 10 minutes until desired consistency.

5. Serve Hot:

  • Preheat the broiler, briefly heat the meatloaf slices. Cut into thick slices, drizzle with mushroom gravy, and garnish with minced parsley.

Notes

  • For a richer flavor, use a blend of ground beef and pork.
  • Adjust the seasoning according to your taste preference.
  • Serve with mashed potatoes and steamed vegetables for a complete meal.
