Ingredients

  • 12 ounces penne pasta
  • ¾ cup + ¼ cup Ricotta cheese (separate portions)
  • cup Romano cheese, shredded
  • ½ cup Parmesan cheese
  • ½ cup Mozzarella cheese, shredded
  • Mozzarella pearls (optional)
  • 2 eggs
  • 4 ½ cups crushed tomatoes
  • 3-4 teaspoon olive oil
  • 4 garlic cloves
  • 1 teaspoon milk
  • 1 tsp sugar
  • 2 tsp dried basil
  • 2 tsp fresh basil leaves, chopped
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

1. Boiling the Pasta:

  • Boil penne pasta in a large pot of salted water until slightly undercooked.
  • Drain the pasta using a colander and set aside.

2. Creating the Sauce: 

  • In the same pot, heat olive oil and sauté chopped garlic until fragrant.
  • Add crushed tomatoes, salt, pepper, sugar, oregano, and dried basil.
  • Cover and simmer the sauce for 10 minutes.

3. Mixing the Cheese:

  • In a large mixing bowl, combine ¾ cup Ricotta cheese, eggs, shredded mozzarella, Parmesan, and Romano cheese. Whisk until well blended. Add pepper to taste.

4. Preparing the Garnish:

  • In another bowl, mix ¼ cup Ricotta cheese with milk until it thickens to a jelly-like consistency.
  • Chop fresh basil leaves finely and set aside.

5. Putting It All Together:

  • Add the cheese mixture to the simmering sauce, stirring until well combined.
  • Add the cooked pasta to the sauce and mix thoroughly, ensuring the pasta is coated evenly.
  • Optional: Top with mozzarella pearls and melt them for added flavor.
  • Garnish each serving with dollops of the Ricotta cheese mixture, ensuring they fall into the center of the plate.
  • Sprinkle with chopped basil leaves and serve hot.

  • For an authentic presentation, garnish the dish with whole basil leaves and ensure the Ricotta cheese dollops are placed centrally on each plate.
