- 12 ounces penne pasta
- ¾ cup + ¼ cup Ricotta cheese (separate portions)
- ⅛ cup Romano cheese, shredded
- ½ cup Parmesan cheese
- ½ cup Mozzarella cheese, shredded
- Mozzarella pearls (optional)
- 2 eggs
- 4 ½ cups crushed tomatoes
- 3-4 teaspoon olive oil
- 4 garlic cloves
- 1 teaspoon milk
- 1 tsp sugar
- 2 tsp dried basil
- 2 tsp fresh basil leaves, chopped
- 1 teaspoon oregano
- Salt and pepper to taste
2. Creating the Sauce:
In the same pot, heat olive oil and sauté chopped garlic until fragrant.
Add crushed tomatoes, salt, pepper, sugar, oregano, and dried basil.
Cover and simmer the sauce for 10 minutes.
3. Mixing the Cheese:
In a large mixing bowl, combine ¾ cup Ricotta cheese, eggs, shredded mozzarella, Parmesan, and Romano cheese. Whisk until well blended. Add pepper to taste.
4. Preparing the Garnish:
In another bowl, mix ¼ cup Ricotta cheese with milk until it thickens to a jelly-like consistency.
Chop fresh basil leaves finely and set aside.
